Hickory and Beer Grilled Squirrel

 

1              Whole  Squirrel

1              Pint        Beer

1              tsp          Salt

1              tsp          Pepper

Preparation

  • Clean the squirrel and wash it with clean water
  • Place in a Ziploc bag with 1 pint of your favorite beer for 1 hour or so. Ales work better to squelch the game flavor.
  • Flash sear the squirrel in the fire to lock in juices.
  • Slow cook over a wood fire with hickory, keeping the squirrel in the smoke as much as possible until done or 165° internal temp.
